La Quinta de Cabriz es una de las fincas vitivinícolas más antiguas de Dão y un espejo en el que mirarse para muchos productores. La región de Dão se sitúa en el centro septentrional de Portugal, al noroeste de la ciudad de Coimbra. Una región rodeada de montañas agrestes, que cuenta con 20.000 hectáreas de viñedo cultivadas, fundamentalmente, con Tinta Roriz (sinonimia de la Tempranillo española), Touriga Nacional (casta más representativa del viñedo luso y autóctona del Dão) y Alfrocheiro.

Dão es una de las denominaciones más antiguas del país (constituida en 1908); durante décadas fue prácticamente la única imagen del vino portugués que trascendía al mundo; el peso de las cooperativas ha sido trascendental; y en la pasada década de los noventa aconteció una revolución cualitativa que la sustrajo del anquilosamiento. En esta nueva etapa se produjo un giro drástico hacia la calidad, un salto que supuso el mayor cambio producido en el sector luso. En ello tuvo mucho que ver la entrada de Portugal en la UE en 1986. El organismo europeo suprimió la normativa que amparaba el monopolio de las cooperativas en Dão, dando luz verde a iniciativas privadas. Así se inició una puesta al día de bodegas y viñedos que ha situado a esta región en la primera fila del circuito portugués. Sus tradicionales tintos de alta graduación y mucho cuerpo se han reconvertido en vinos fáciles de beber, elegantes, equilibrados y con buena acidez.

Su historia presenta un importante paralelismo con la D.O.Ca. Rioja (España)

Associated to Paço dos Cunhas de Santar is Sociedade Agrícola de Santar, a manor house of the XVII and XVIII Centuries. Surrounded by hedges, boxwoods and labyriths of flowers, is a perfectly preserved cellar.

Built in granite, with its historical tiles, it houses in an ancient environment, the most modern and advanced technologies. Top quality wines are produced here, in a 400 year-old structure.

In the balcony of the tasting room, you can taste wines of different ages. Next to the cellar the acclaimed vineyards are surrounded by pine trees and chestnut groves. The high-quality grape varieties produce the acclaimed white and red wines of Casa de Santar, that range from all market requirements, and also the Late Harvest, for dessert.

In 2007, Sociedade Agrícola de Santar, with its Casa de Santar wines, was elected Producer of the Year, by Revista de Vinhos (Portugal).

QUINTA DE CABRIZ
        
In 1989, in the heart of the Dão wine region, in the village of Carregal do Sal, Dão Sul is born. Inspired in Quinta de Cabriz, a property with a magnificent manor house and chapel of the XVII Century, Dão Sul has become a reference of winemaking in the Dão.

Of the vineyards surrounded by pine trees, the grapes produced in integrated production give way to wines with balanced acidity and delicate aromas of the brand Cabriz. With a portfolio that ranges from Cabriz Colheita Seleccionada to Cabriz Four C, from Spirits to sparkling wines, the white and red grape varieties are vinified in a modern cellar with the support of a modern laboratory and a fully equipped tasting room.

The wines defined by the winemaking team, can be found not only in Portugal but also abroad in countries like the United States of America, United Kingdom, Germany, Brazil, Angola, just to mention a few.

The success of the Dão wine region wines determined the expansion to other Portuguese wine regions. In 2000, the Douro, Bairrada, Lisbon and Alentejo regions, along with the innovative project in Vale do São Francisco in Brazil, were added to the wine region map where Dão Sul produces top quality wines.

Believing that the best way to communicate the wines to consumers is to show the process, Dão Sul is a firm believer in Winetourism. The winery is open to all visitors so that they can feel the production environment of such special wines and invites them to get to know the Quinta de Cabriz Restaurant, a space where you can taste the regional foods matched up with our wines.
